Let me introduce a soba noodle shop in Fukuoka that has long been a local favorite:
“Tamesey,” located at 1-5-9 Muromi, Sawara-ku, Fukuoka City. ‼️
This renowned shop has been cherished by the people of Fukuoka since 1968. 😌
Its roots trace back to the early Taisho era; the business was founded in 1968 by the previous owner, who had honed his craft at “Tametomo,” a soba shop originally established in Kumamoto.
They take great pride in their “hachi-wari” (80% buckwheat) noodles. These are made using a blend of wheat flour and buckwheat flour—milled from the center of the buckwheat kernel to ensure a clean, refined flavor—and are prepared using the Edo-style technique of rolling out large batches of dough with three rolling pins.
This time, I enjoyed the sauce katsu-don (breaded pork cutlet bowl with sauce) and oroshi soba (buckwheat noodles with grated daikon radish)‼️
The sauce katsu-don features a large, tender pork cutlet and shredded cabbage gently resting on the rice; the sauce—sweet yet refreshing with a Japanese-style flavor profile—is truly delicious‼️
As for the oroshi soba, it offers a simple way to savor the quality of the noodles themselves, elevated by the gentle flavors of grated daikon radish and bonito flakes for a refined finish.
It’s easy to see why this place has been loved for so long😌
I highly recommend this shop to anyone wanting to fully enjoy soba in Fukuoka‼️
