



Let me introduce a popular ramen shop in Fukuoka:
“Kurume Ramen-do Menshi,” located on the first floor of the Baba Building at 39-2 Higashi-machi, Kurume City, Fukuoka Prefecture! 🍜
This is a rising-star tonkotsu (pork bone) ramen shop that has been loved by locals for over a decade. 😃
They take great pride in their house-made noodles, crafted using “Ra-Mugi” wheat grown in Fukuoka. Their 100% tonkotsu broth combines Kurume’s traditional “Yobimodoshi” technique with Hakata’s “Torikiri” method; this fusion creates a rich, savory depth balanced by a clear, clean finish—resulting in a refined taste free of any unpleasant aftertaste. 🍜
The interior is designed to evoke the atmosphere of a traditional Okinawan folk house, and it’s wonderful to see the energetic staff calling out to one another as they work! ‼️
This time, I opted for the recommended lunch set featuring “Ramen Kokorozashi” and the “Kurume Damuru-don” rice bowl.
The “Ramen Kokorozashi” showcases a refined pork-bone (*tonkotsu*) flavor and a perfectly balanced richness that speaks to the high quality of the dish! ‼️
It is truly delicious. 😋
The “Kurume Damuru-don” features pork offal (*shiro-motsu*)—a staple of Kurume’s famous *yakitori* scene—grilled until aromatic and served over rice with scallions; it is absolutely exquisite! ‼️
Each element reflects local flavors that have been expertly refined—a really great touch. 😃
I highly recommend visiting this shop if you are ever in Kurume! ‼️
