This is a tonkotsu ramen restaurant run by Aoyama Seimenjo, which was founded in 1953.
The current owner, who inherited the restaurant from his parents, spent a year researching and studying on his own to completely rethink the tonkotsu soup, and that’s how he arrived at the current soup.
This time, I had the char siu ramen 🍜
First of all, the tonkotsu soup is truly delicious, with the rich flavor of pork bone, a refreshing taste, and just the right amount of fat, all brought together by the accents of green onions and seaweed 😍
The homemade noodles have a firm, distinctive chewiness and pair perfectly with the soup 😍
The thick slices of char siu are incredibly tender and would go well with rice too‼️
The ramen is truly exceptional, allowing you to enjoy both the refreshing and just-right richness 😃
I would definitely recommend this restaurant to anyone who loves tonkotsu ramen 😋
